Mushroom Chicken


Ingredients 

Chicken                                                250 grams
Mushrooms (halved)                             12
Chicken stock                                       1 cup
Chili sauce                                            1 tsp
Soya sauce                                            1 tsp
Cornflour                                               1 tsp
Sugar                                                     1 tsp
Ginger / garlic paste                             4 tsp
Pakistani chinese salt                           1 1/2 tsp
Salt                                                        1/4 tsp
Oil
Method

  • Marinate chicken pieces with 1/2 tsp Pakistani chinese salt, 1/2 tsp sugar, salt, cornflour and 1 tsp oil, and aside.
  • Heat oil in a wok;fry chicken pieces and remove.
  • Fry ginger / garlic in the same oil; add chicken pieces, chili sauce, soya sauce, stock, salt, and remaining sugar and Pakistani chinese salt; cook for 5 minutes.
  • Add mushrooms; cook for few minutes and remove.

Fried Sesame Chicken


Ingredients 

Chicken breasts:                                    1/2 kg
Egg (beaten)                                           1
Refined flour (sieved)                            1cup
White sesame seeds                              56 grams
Red chili powder                                    1 tsp
Soya sauce                                             1 tbsp
Black pepper                                         1/2 tsp
Oil                                                          for frying


Method


  • Cut chicken beasts into small pieces.
  • Marinate chicken with salt and soya sauce and set aside for a little while.
  • Mix salt, red chilies, black pepper and sesame in flour.
  • Heat oil an a frying pan.
  • Coat chicken pieces first with egg and then flour.
  • Fry both sides till golden and remove on absorbent paper; serve hot.

Sweet and Salty Meat


Ingredients


Undercut:                                            350 grams
Cornflour:                                           2 tsb
Red Capsicum:                                   1
Capsicum:                                           1
Pineapple Pieces:                              450 grams
Garlic (Chopped)                                2 cloves
Eggs (Beaten) 2
Spring Onion:                                      2
Salt: 1 tsb
Oil: 2 tbsp
+ for frying

Ingredients for Sauce


Vinegar: 1/2 cup
Sugar: 1/2 cup
Tomato Ketchup: 3/4 cup
Chicken Stock: 1 tbsp
Cornflour: 2 tbsp
Salt: 1/2 tsp

Method:

  • Cut undercut into 1/2 inch thick pieces; apply salt and keep aside.
  • heat oil in a wok; coat meat pieces first with egg and then cornflour; fry till golden.
  • De-seed and cube capsicums. Cut spring onions lengthwise.
  • Heat 2 tbsp oil in a work; fry garlic and onion; add pineapples, spring onions and capsicums.
  • Mix sugar, tomato ketchup, stock, soya sause, cornflour and salt in vinegar; put in wok.
  • Cook for 5 minutes; add meat; mix and dish out.
